Summer Smoothie: Lime Time!
If summer isn’t the perfect time for smoothies, I don’t know what is! We love smoothies for breakfast, but any leftovers, and we like to pour into a popsicle mold to eat later. We even have re-blended the smoothie popsicle for yet another smoothie!
I decided on trying a coconut lime smoothie, because at the grocery store, in the frozen fruit section, I saw frozen coconut flesh. I thought it sounded like a fun way to use coconut, rather than coconut flakes (or breaking apart my own coconut), so I bought it. It wasn’t till I got it home that I noticed they added sugar to it! Bummer! That will teach me to make sure I read labels, and not assume anything.
So, here is our Smoothie. While it was good as a smoothie, it was even better as a popsicle!
- 8 ounces pineapple juice (we drained ours from a can of pineapple)
- 1 cup plain yogurt
- 1 tsp. lime juice
- 1/2 tsp. coconut extract
- 1 TBL coconut flesh (or shredded coconut)
- 1 cup ice cubes
- Optional: sweetener like a squeeze of honey or agave.
Blend until smooth. Garnish with lime zest and coconut shavings.
