People with food allergies cannot rely on labelling to alert them to hidden ingredients that could cause serious risk.

A recent survey showed one in 10 of the food samples analysed were found to contain undeclared egg, peanut or soya.

There was particular concern about the failure to declare peanut as an ingredient because it can cause a life-threatening allergic reaction, known as anaphylaxis.

The survey was carried out by health inspectors in the HSE and the Food Safety Authority on 106 items from a range of food stuffs.

LEINSTER’S Heineken Cup success in Cardiff was a truly inspiring victory. When things aren’t going well during a game, it’s common to see some teams fold. But Leinster are made of different stock these days.

They have built solid foundations in their youth programme and this investment is paying off with a stream of younger players who are being bred on success. They are getting used to winning, and winning, just like losing, is a habit.

Yam Pancakes

For letter-Y we wanted to make Yam Pancakes! I’ve actually been eating yam pancakes for awhile now, only the ones I’ve been making (with egg whites and protein powder) don’t usually appeal to my kids. LOL

These yam pancakes are different though!  Kids love them, and they got rave reviews by my neighbor and recipe tester!

And why would you add yams to your pancakes you ask?  Well, since you asked… Yams are a great source of Vitamin A!  In one yam, depending on the size and where it came from, you may get 35%-90% of your daily recommended value for Vitamin A!

So, the easy steps to

  • I took one leftover yam from dinner (you can leave these in the flesh, and put them in the fridge.  They are great as leftovers or to use in recipes)
  • I used
  • 1/2 cup of the cooked yam scooped out from it’s skin.
  • 1 cup low fat milk
  • 1/2 tsp. cinnamon
